Coal Creek Golf Course Has a New Place to Eat, Drink, and CelebrateLOUISVILLE, CO - A new restaurant has arrived at Coal Creek Golf Course. The Turn at Coal Creek is now open at 585 W. Dillon Road in Louisville, welcoming golfers, neighbors, and visitors looking for a casual place to stop for food and drinks. The restaurant held a soft opening on April 1 and, for the month of April, will be open daily from 8 a.m. to 4 p.m. During this startup period, guests can stop in for drinks and grab-and-go items such as sandwiches, hot dogs, and breakfast burritos as operations ramp up. In May, the restaurant will transition to full service, and the menu will include grab-and-go breakfast options, including burritos, sandwiches, and overnight oats, along with golf course favorites such as chicken Caesar wraps, bratwurst, club sandwiches, wings, onion rings, and mozzarella sticks. Behind the bar, guests will find golf-inspired cocktails such as the Transfusion and the house original Water Hazard, along with a selection of canned and draft beers. During peak season, The Turn at Coal Creek will be open from 7 a.m. to sunset. A beverage cart will also serve players on the course during the season. In addition to daily service, the venue will be available for private events. With May graduation season around the corner, bookings are already open, offering a scenic setting for celebrations and gatherings. The restaurant is owned by local restaurateur Chris Rubeck, and if you’ve ever grabbed a bite from the Ruby Ru’s Food Truck in Lafayette or settled in at the brick-and-mortar on a busy Friday night, you already know his work. You know the food is good and the vibe is even better. What you might not know is that Rubeck’s connection to Coal Creek goes back further than you might expect. He grew up in Lafayette, graduated from Centaurus High School in 2006, and in 2016 was working in this very kitchen when it was home to The Sweet Spot Cafe. It was his last job before he launched Ruby Ru’s Food Truck in 2017. What started on four wheels grew into a brick-and-mortar restaurant in Lafayette, along with Frost & Dough, a dessert trailer specializing in donut holes and ice cream. “Coming back here feels like coming full circle,” said Rubeck. “I can’t wait to feed this community and be part of the Coal Creek family again.” The Turn at Coal Creek is its own concept, with a menu built for golfers grabbing a bite at the turn and neighbors looking for a casual place to stop in.
